Vivanterre White Petnat PRS
60% Chardonnay from Beaujolais Villages near the town of Bully. 20% Pinot Blanc and
20%Pinot Gris from Heiligenstein in Alsace. Both grapes are sourced from organic and
biodynamic vineyards. The Chardonnay come from 30 year old vines with red clay
and limestone soils, and the Pinot Gris and Pinot Blanc come from clay and limestone
soils with 35 year old vines.
The grapes were harvested at the beginning of October, fermented slowly and then bottled quickly while primary fermentation was still happening. The wine was under crown cap until June 3rd, 2022 when it was disgorged.
There was no fining, filtering, or SO2 added during any phase of winemaking. The harvesting, vinification, and elevage was done by Patrick Bouju and Justine Loiseau.
